Pumpkin Chocolate Chip Cookies
A Perfect Fit owner, Rachael Lewis, created these while studying the effects of different foods on her blood sugar levels. She noticed that by using lower glycemic ingredients, such as coconut sugar and almond flour, she was able to continue enjoying her favorite treats without causing a rapid rise in blood glucose.
Unlike traditional desserts, these cookies will not spike your blood sugar levels as high as their counterparts. Over time, consistent spikes in blood sugar levels can potentially lead to various health concerns including:
Type 2 Diabetes
Heart Disease
Energy Crashes
Weight Gain
Not only are these the perfect fall dessert, they also are gluten, grain, dairy and refined sugar free!
Ingredients
2 tsp vanilla
1 egg
½ cup coconut sugar (feel free to cut in half)
¼ cup organic pumpkin puree (not pumpkin pie mix)
¼ cup maple syrup
½ tsp cinnamon
1.5 cups fine almond flour
¾ cup tapioca flour
½ tsp baking soda
¼ tsp salt (use less if using pink salt)
1 Hu dark Chocolate Bar chopped
Instructions
In bowl, mix the vanilla, egg, coconut sugar, pumpkin and maple syrup
Add the flour, cinnamon, baking soda and salt and combine til smooth
Mix in the chopped chocolate
Refrigerate dough 1-2 hours
Turn oven on to 350 degrees F
Using an ice cream or cookie scooper, scoop round balls onto parchment lined baking sheet
Bake for 8-10 minutes (do not over bake)
Let cool before serving
Best when stored in fridge
