Cinnamon Roll Energy Bites
Looking for the perfect, healthy snack idea to pack in your child’s lunches or share with their class? Chef Liz is sharing her holiday twist on classic energy bites! These are a great on the go snack and nutritionist approved.
Ingredients:
1 cup rolled oats
1/4 cup ground flax or chia seeds
1/2 cup almond OR cashew butter
1/3 cup maple syrup, or honey
1 teaspoon vanilla, optional
1 tablespoon ground cinnamon
1 tablespoon fresh lemon juice
1/2 cup raisins or finely chopped pecans (or ½ & ½ !)
Instructions:
1. Mix ingredients in a bowl.
2. Portion using an ice cream scooper and roll into bite sized portions.
