Show Me St. Louis Energy Bites

We had a blast making these healthy energy bites for our Back to School segment on Show Me St. Louis! They’re a perfect snack to tuck into your kid's lunch box or to keep in the car for those busy days between practices. Give them a try and let us know what you think!

Ingredients:

1 cup rolled oats

2/3 cup unsweetened shredded coconut

1/2 cup creamy peanut butter

1/2 cup ground flax seeds

1/2 cup dark chocolate chips

1/3 cup honey

1 Tbsp chia seeds

1 tsp vanilla

2 tbsp Protein powder (optional)

Pinch of salt

Instructions:

  1. Mix all of the above ingredients in a bowl.

  2. Form into 1” balls.

  3. Store 1 week in refrigerator and 3 months in freezer.

Fun twist: Make into cake pops by inserting sticks and rolling into your favorite toppings such as melted chocolate, mini chocolate chips or coconut shreds
